Step 1. Gather ingredients 1 minPrepare al ingredients on a table: 2 fresh eggs, 2 tbsp white wine or lemon juice, 2 tbsp water, 4 oz (100 g) butter. |
Step 2. Separate eggs 1 minSeparate the egg yolks from the egg whites. Store the whites in a glass jar in the fridge for another recipe. |
Step 3. Add egg yolks to saucepan 3 minAdd the egg yolks to a small saucepan with 2 tbsp of water, 2 tbsp of white wine or lemon juice, and whisk until well combined. |
Step 4. Add butter 1 minAdd 4 oz of soft butter to the egg mixture. |
Step 5. Make sauce 3 minPlace the small saucepan with the egg yolk mixture over a pan of hot water without allowing the water to touch the bowl. The steam will heat it. |
Step 6. Season Sauce 1 minSeason with salt and crushed pepper. Serve right away or cover to keep warm. If the sauce gets too thick, whisk in a teaspoon of luke warm water to loosen it up. |
