Duck is delicious year-round, but late summer through fall (August to November) is when it truly shines. The meat is more flavorful, and the fat content is just right for that beautiful rendering. You can make it with seasonal ingredients like figs, squash, and pomegranates pair wonderfully during these months. One of the most delicious pairings is fig jam.
Where can I buy the ingredients for this recipe?
The best quality duck breasts, especially magret de canard, are typically found at gourmet butcher shops, French delicatessens, or online meat suppliers. If you live in a big city, specialty grocers often carry fresh duck in the refrigerated meats section. Always look for plump breasts with the skin on, firm to the touch, and without any off smells.
Ideally, you need to buy 2 fillets (each of 8 ounces ~200 g) and come from a reputable farm or supplier. If you have a larger amount of meat, you need to cook it longer to your preferred doneness.
