How to make Mediterranean Salmon Ceviche

Step 1. Prepare salmon 5 minutes

Begin by cutting the salmon into small, bite-sized pieces. Make sure to remove any bones and skin.
In a non-reactive bowl, place the salmon pieces. Cut 2 oranges and squeeze juice over salmon.

Step 2. Marinate salmon 20 minutes

Pour orange juice over the salmon to completely cover it. Season with a little bit of salt. Let it marinate for about 15-20 minutes to "cook" the salmon slightly in the acidity.
While the salmon is marinating, prepare the rest of the ingredients.

Step 3. Cut other vegetables 3 minutes

Once the salmon has been marinated, add chopped onion, cherry tomatoes, chives, yellow pepper, and parsley to the bowl.
Drizzle some extra virgin olive oil over the salmon.

Step 4. Season 1 minute

Season with salt and pepper to taste.
Gently toss the ingredients together until evenly combined.

I would have never thought salmon could be this tasty! I’ve always been using a ton of spices for some reason, but not anymore. The actual taste of the fresh salmon is worlds better!
