Step 1. Dice salmon 5 minutes

Begin by ensuring that the salmon fillet is very fresh. Rinse it under cold water and pat it dry with paper towels. Then, use a sharp knife to finely dice the salmon into small pieces. Place the diced salmon in a mixing bowl.

Step 2. Add seasoning 5 minutes

In the same bowl with the diced salmon, add the lime juice, lemon juice, rice vinegar, and olive oil.
Add the chopped cilantro, chives, and minced shallot to the bowl with the salmon.

Step 3. Toss and season 2 minutes

Gently toss all the ingredients together until the salmon is well coated with the lime juice, lemon juice, vinegar, olive oil, and herbs.

Season the salmon tartare mixture with salt and pepper to taste. Be sure to taste test and adjust the seasoning as needed.

Step 4. Chill 30 minutes

Cover the bowl with plastic wrap or transfer the mixture to an airtight container, and refrigerate for at least 30 minutes to allow the flavors to meld together.
Once chilled, remove the salmon tartare from the refrigerator and give it a final stir. Taste again and adjust the seasoning if necessary.

Step 5. Serve 1 minute

To serve, you can either shape the salmon tartare into rounds using a ring mold or simply spoon it onto serving plates. You can also garnish with avocado slices, cucumber slices, or a sprinkle of sesame seeds if desired. I serve it with shrimp chips, so good! (but totally optional).
